A bagel seller with her stall at the Petticoat Lane market in Whitechapel, east London in about 1915. Bagels - rings of dough with a smooth texture which can be split and made into circular sandwiches - are a gastronomic gift to the world, and were first brought to London by eastern European Jews. The Petticoat Lane market was originally founded by Huguenot refugees fleeing from persecution in 17th century France. It became the focus for another group of migrants to London with the establishment of a Jewish community there in the late 19th century.
